Fruits of an eggplant contain 7-10 % of the solid, about 1 % of protein, 1,5-5 % of sugars, 1-2 % of cellulose, 1-3 % of vitamin C. Bitterish smack gives to fruits solanin. Its contents increases in process of their maturing and reaches a maximum at a biological maturity.
