Koumiss – salutary drink from the kobyly milk, esteemed in the east since ancient times. In the publication it is a question of salutary properties of this drink which for the Crimean health resorts is prepared by Agrofirm Zelenogorsk the Belogorsky area. Here, in the foothills of the Crimean Mountains herds of horses are grazed, and in economy shops skilled experts prepare koumiss – drink giving to people health.

The absolute favourite among drinks in the east considered koumiss (from Turkic kymyz – rewandering kobyle milk). Many and consider that koumiss is kobyle milk. However actually koumiss is the low alcohol drink made of kobyly milk.
Koumiss possesses magic improving qualities. By right it is possible to call it a life elixir: koumiss feeds, strengthens, updates, revives a human body.
Since ancient times did koumiss so: a mare milked, using thus a special vessel from the skin which has been removed from a neck of a camel. Streams of milk flew in such vessel silently, without disturbing and without frightening a mare. Nadoyennoye kobyle milk filled in in a leather bag, added there dried cottage cheese and kurt (ferment) and often mixed. During hashing the processes, double fermentation occurring in drink amplify: lactic and spirit (barmy). In couple of days koumiss "kept up", and it started to drink, constantly adding instead of the drunk koumiss fresh milk. Depending on term of fermentation and different additives it is possible to count at least ten grades of koumiss: summer, autumn, winter; weak, average, strong …
Treatment by koumiss (kumysolecheniye) has salutary effect on blood: the content of hemoglobin raises, the leykotsitarny formula improves. This magic drink is used in treatment gastroenteric, warm vascular and nervous diseases, at avitaminosis and violations of the general metabolism.
Researches revealed a significant amount of specific proteins, biocatalysts, unique fermental systems in koumiss. The microflora of koumiss promotes accumulation in an organism of the antibiotic substances operating bakteritsidno and bakteriostaticheski concerning pathogenic microbes.
There is in the Belogorsky region of AR Crimea a unique enterprise – Agrofirma "Zelenogorsk". Already throughout many tens years she is the unique producer of koumiss in the Crimea and in Ukraine. Once in its grounds walked nearly one thousand horses, and the flock was estimated in ten thousand sheep. Also nearly 200 tons of curative kobyly milk a year were made here.
Today in agrofirm annual production of kobyly milk within 35 tons. For its receiving here use two breeds of horses – Bashkir and Russian tyazhelovozny. The general livestock in 315 heads is served by 10 people.
Branch horse breeding in Zelenogorsk agrofirm – the most profitable. This year it is planned to increase production of kobyly milk to 50 tons since, the head of department of supply explains and Elvira Seytveliyeva is sold, production is in great demand in a network of medical institutions. Thanks to laborious work of the master of kumysny shop of Maria Yurevna Zhdanova koumiss from "Zelenogorsk" – guaranteed qualitative.
A lot of work in animal husbandry as the expert of an economy since 1965 to the present is carried out by the main livestock specialist of agrofirm Evgeny Andriyovych Tikhy, working in close cooperation and in mutual understanding with the director the Honoured worker of agrarian and industrial complex of AR Crimea, the gentleman of an award of the Labour Red Banner, the winner of a medal For pracyu i zvityagu Vasily Leontyevich Lyubovetskim. Many difficulties passed colleagues together for many years the labor activity, but also a lot of pleasures presented them results of their work.
In unusually picturesque place of a foothill part of the Crimea 5,7 thousand hectares of the earth of Zelenogorsk agrofirm are located. Creative professional activity here boils. Here it is interested work with coming tourists and are always sincerely glad to guests. Here and to us, specialists of the Crimean state agrarian educational advice center, it was possible to feel on itself openness and kindliness of specialists of agrofirm. We tried curative koumiss, frayed withers of brown-eyed horses, admired the nature and didn’t hide admiration of people for which to do serious work – means: to love, and to love – means: to do serious work.
