How to define honey falsification

In this article methods of determination of quality of honey are described.

To honey can mix different products: cane sugar, potato, corn and other treacle, a flour, swept also the other.

It is easy to impurity of extraneous substances to define. In a test tube or a flask put test of honey and add the distilled water. Honey is dissolved, and at a bottom or a surface there are impurity.

If there is a suspicion on flour or starch impurity, to test of the honey dissolved with distilled water, add some drops of usual solution of iodine. Dark blue coloring of a mix testifies to availability of impurity.

For identification of impurity swept, to the honey dissolved in a test tube it is necessary to add some drops of any acid or vinegar. As a result there will be an allocation of carbon dioxide.

Impurity of the starched treacle made in the cold way, it is easy to determine by appearance, on glutinosity and absence of crystallization. It is possible to use and the next way: to 1 part of honey add 2-3 parts of the distilled water and one part 96 of gradusny alcohol, everything mixes up. Solution of milky-white color will turn out, and during upholding the transparent sticky weight (dextrin) is besieged. If impurity aren’t present, solution remains transparent. Only in a place of contact of layers of honey and alcohol hardly appreciable turbidity which disappears after agitation is formed.

Impurity of a sugar syrup define, adding to 5-10 % for honey solution in water solution of nitrate silver, the deposit of chloride silver is as a result formed. If impurity of a sugar syrup isn’t present, the deposit isn’t formed. Other way: to 5 ml of 20 % of solution of honey in the distilled water add 2,5 g of lead vinegar and 22.5 ml of methyl alcohol. Formation of an ochroleucous deposit testifies to availability of impurity of a sugar syrup.
