Why pears spoil quicker, than apples?

The hypothesis which has been put forward during research by the European scientists is given in article, allowing to answer a question why pears spoil quicker, than apples?

Pears spoil quicker, than apples because they simply don’t have air, the European scientists consider. This opening should cause development of new ways of storage of the pears preventing their premature rotting on the way on counters of shops.

Scientists carried out a number of the experiments  which results were published.

After apple or a pear break from a tree, they continue to "breathe", researchers speak. In order that fruit remained healthy, access at least the minimum quantity of oxygen is necessary for each its cage. Otherwise fruit starts to spoil quickly.

Samples of each fruit were placed under sinkhrotronny beams by means of which 3D-models with high resolution in a thousand share of millimeter were received.

According to the hypothesis which has been put forward by researchers, both apples, and pears contain the microscopic channels lying between cages on which air arrives in depth of fruit. The images received by means of a sinkhrotronny beam, allowed to see the big disorder cavities which are settling down between cages while in pears these cavities much less and represent a network of the interconnected channels in apples.

Thus the sizes of empty spaces in apple often exceeded the sizes of the next cages, and some cages appeared in any way not connected with these cavities. In a pear, on the contrary, internal emptiness were less, than surrounding cages, and each cage is surrounded with a dense and continuous network of emptiness.

Researchers hope that their work will allow to understand better the processes of decomposition occurring to fruit after their harvesting and to find the answer to a question "why pears are more subject to rotting in the course of storage. Creation of the computer models counting level of concentration of oxygen in separate cages of fabrics of fruit can become other possible range of application of results of research.
